Ingredients:
6 egg yolks
1 cup sugar
1¼ cup mascarpone cheese
1¾ cup heavy whipping cream
Italian Lady fingers
1 cup cold espresso or very strong coffee
2 tbsps coffee liqueur (optional)
1 tbsp cocoa for dusting/ Chocolate Shaving/ Wafers (optional)

Instructions:
Make the espresso or brew the coffee and set aside to cool. Depending on your tastes you can add a little extra hot water to the espresso to dilute it a bit. If you are using the coffee liqueur, add it now. I prefer to let the espresso shine all on its own.

Combine egg yolks and sugar in the top of a double boiler or Bain-Marie. Reduce heat to low, and cook for about 10 minutes, whisking constantly until your yolk/sugar mixture has doubled in volume. Make sure the temperature is set on low, the water in the bottom pot should be simmering not boiling, otherwise you will end up with scrambled eggs. 

Remove from the heat and whip yolks with an electric mixer until thick and a light yellow colour (the consistency of vanilla pudding). Add the Mascarpone cheese to whipped yolks, beat until just combined.

In a separate bowl, whip the cream until stiff peaks begin to form (approximately 5 minutes on high speed). Very gently fold the whipped cream in the mascarpone egg mixture using a spatula and set aside (do not beat or whisk otherwise your whip cream will deflate and the texture of your mixture will not be light and airy).

Dip the lady fingers into the mixture quickly just to get them wet, do not soak them! I like to throw them in and quickly flip them over to get both sides wet, the coffee soaks through quickly and you don't want a soggy mess. 

Also note that I am using Italian style lady fingers (available at Walmart or Longos) the standard lady fingers are too large and too soft. 

Arrange the lady fingers in the bottom of a baking dish (or individual jars). Spoon half the mascarpone cream filling over the lady fingers. Repeat process with another layer of lady fingers and cream.

Refrigerate 4 hours or optimally, overnight, for best results. Dust with cocoa powder, chocolate curls, or wafer cookies. Or all 3 as I have done.
