This is the perfect chocolate chip cookie, crispy on the outside soft, chewy and moist on the inside. Recipe adapted from Mom's Chocolate Chip Cookies.

Ingredients:
1 cup butter, softened
3/4 cup brown sugar
1/4 cup granulated sugar
1 package instant vanilla pudding mix
2 eggs
2 & 1/4 cups flour
1 teaspoon baking soda
2 teaspoons pure vanilla extract 
1 bag of semi-sweet chocolate chunks (226 grams)
1 cup chopped walnuts (optional)

Directions:
Preheat oven to 350 F

In a large bowl cream together the butter, granulated sugar, and brown sugar using an electric mixer on medium speed until smooth.

Add the eggs, pudding and vanilla extract, mix until combined. 

Add the flour and baking soda and mix until well combined. 

Add the chocolate chunks and walnuts (if using) and mix with a wooden spoon or spatula. 

Using your palms roll spoonfuls of dough into 1 inch round balls. Place on baking sheet and cook for 8 to 10 minutes or until just browned on top. ***Note: these cookies don't really spread so if you prefer thinner cookies rather than thick ones press the round balls of dough so they are flatter on the cookie sheet before baking***

Remove from oven and allow to cool on the cookie sheet for 5 minutes before transferring to a cooling rack.
