Pinterest is so much fun for finding new ideas of things to make, as soon as I these I knew I had to give it a try. I made these a while back and only now realized I forgot to post the tutorial. These little part cookie part apple pie creations are so cute and so delicious. They're best served fresh from the oven, so they're still flaky and soft. 

***NOTE: the best part of this recipe is you can do as much or as little as you'd like. Most of the ingredients can be bought pre-made in the store, or if you're feeling adventurous you can make all the ingredients yourself. I've provided links to my other recipes for everything you need***

What you need:
Pie crust(store bought or my recipe here). You need two the same size
Apple Pie filling(store bought or my recipe here)
Caramel sauce (store bought or my recipe here)
1 egg
1 tablespoon milk
course sugar (optional)

What to do:

Preheat oven to 350 F. 

Using a rolling pin roll out the first pie crust until it is about 1/4 inch thick. If using store bought simply unroll the crust. 

Spread a thin layer of the caramel sauce on top of the entire pie crust. 

Next Spread a thin layer of the apple pie mix over the entire surface and using the back of a spoon or knife press down on the apple mixture to pack it in tight. 

***Note: You want to cover the entire pie dough but remember these are cookies so you want them pretty thin, you don't want them overflowing with filling otherwise they will become soggy and won't hold their shape***

Take the second pie dough and cut it into 1/2 inch strips using a knife or pastry cutter. Place about 8 strips vertically over top of the pie mixture. Then weave strips horizontally through the vertical strips, using an over under method (see pictures)

Use a round cookie cutter to cut out circles from the pie. Try to space the circles as closely as possible to make the most of the pie. 

Place the pie cookies onto a baking sheet lined with parchment paper. 

In a small bowl mix the egg and milk. Using a brush, brush the tops of the pie crust with the egg wash. Sprinkle with course sugar if using.  

Place the baking sheet into the oven and bake for 15 minutes or until the tops are golden brown. Carefully remove from the oven and allow the cookies to cool for 5 minutes before serving.
